Alice Waters

Alice Waters isn’t greatly known in the UK. She holds the same respect in the US as perhaps Elizabeth David does in this country. The food at her restaurant Chez Panisse in Berkeley, California is French inspired and centred on the idea of the freshest possible, local produce. It’s very meat and fish focussed although for a long time now Waters has been a loud advocate for fresh vegetables in the country’s diet.

We’re drawing on her cookbooks for recipes to suit the deli.  Little changes will have to be made—some of the recipes we’ve got our eyes on have anchovies for example. We’re looking forward to make foods that pay respect to her contribution to world cooking
