Falafels, those ball of chickpea goodness, crunchy on the outside, soft and herby on the inside, nestled in a salad and flatbread, are ubiquitous all over the world. Every country says it makes the best so we’re working on English supremacy in this minor major matter. We’ve been nicking recipes, inventing new flavours and generally messing with taste, texture and ingredients.
